Spicy Tuna Avocado Salad
I've been playing around with this idea for awhile. A friend in AZ loves sushi, California Roll and Spicy Tuna rolls being a couple of her favourites
But its hard to find good quality at your neighborhood supermarket(Sorry Walmart sushi not so much) Trying to make this lighter I turned this into a salad and cut out the sushi rice. I realize most of you won't be able to get fresh ahi tuna but you should be able to get frozen ahi steaks or if you like fresh fish you can substitute salmon.
2 C Tuna (Ahi Poke chunks)
2 C Avocado (same size as poke chunks)
1 C Daikon (Japanese radish)– julienne
1 C Cabbage- julienne
Cucumber- slices as desired
2 C Lettuce- for salad bed (or Spinach)
Nori strips(Use Sushi Nori sheets thinly sliced into strips)
Soy sauce
Sesame Seeds as desired
sliced green onions
Salad Dressing:
8 Tb Ponzu sauce (It is a citrus/soy based sauce, you can find in most Asian markets)
4 Tsp Sesame Seed Oil
Black Pepper to taste
Chili Mayo:
1/2 C Mayonnaise,
1/4 Siracha Chili Sauce (or as hot as you like)
2 Tsp Garlic Paste (add more to taste)
1 TB Brown Sugar
Juice of 1/2 lemon
Mix tuna and avocado with the chili mayo mixture and soy sauce.
On a salad plate, spread a bed of lettuce, add the tuna/avocado mixture in the middle of the bed of lettuce, then top with daikon, cabbage, and slices of cucumbers.
Sprinkle with strips of nori, sliced green onions and sesame seeds.
Add dressing to the salad (don’t pour over the tuna/avocado).
Notes:
You can use most leafy greens instead of butter lettuce - I like baby spinach or local Manoa Lettuce(a variety of Iceberg)
I used julienne daikon, a common accompaniment to sushi, to add crunch but you could substitute the sprouts of your choice (radish sprouts will add an extra kick as well as crunch)
Shredded/grated carrots are also a great add-on
If you feel you need some kind of starch component try slicing won ton skins into strips then lightly deep frying (Some Asian Markets carry these as snacks like chips)
And yes the pictures don't show much of the greens, sorry they emphasize the tuna but you get the idea
